So I’m getting ready to shoot a bunch of new outfits for the fall even though I am not ready for it just yet. Can you believe today is September 1st?!? I do love the crisp weather and everything that comes with the season but I’m still holding on to the last few days of summer as long as I can. I needed something to put me in the cozy, warm mood so I decided to make this potato dish that is very traditional in the Russian household. It is my hubby’s favorite side dish and he was so thrilled I made it for him. It brings me back to when I was a little girl and I would watch my Babushka cook in the kitchen. Nothing beats the traditional home cooking. It really is a simple recipe to make and so delicious. If you have a group of people that like crispy, deliciously fried potatoes this is the best recipe. The little bit of dill adds to much flavor to this dish it is heavenly. Enjoy!
Crispy Fried Potatoes w/mushrooms
- 5 Russet potatoes cleaned
- Half a yellow onion, sliced
- 1 package of sliced white mushrooms (you can always add more if you like)
- Several sprigs of fresh dill
- Olive oil, 3 tbsp
Directions
- Cut potatoes in half length-wise & then slice each half about 1/4 in thick
- In a large pan add the olive oil,heat to med/high and then toss in the potatoes (you may have to work in batches depending on the size of your pan. I made two batches)
- Keep stirring the potatoes around so they get crispy on both sides but be careful they don’t burn.
- After about 5min add the onions & mushrooms
- Add salt & pepper
- Keep stirring and frying the potatoes until they are crispy on both sides.
- Turn the heat off and add in the dill. Stir it a few times and then serve on a warmed platter & sprinkle more dill on top.
