So summer is long gone and fall is here but there is still some bits of summer still lingering around, like white jeans, al fresco dining, and summer fruit. I still had a ton of peaches but wasn’t really sure what I wanted to make with them. As you know I recently got 2 Lodge cast-iron skillets (another frittata anyone?) and cant’t stop cooking in them! They take some elbow grease to clean but so worth it….it cooks everything so wonderfully. I was browsing around for a peach cobbler recipe when I stumbled upon this Caramelized Peach White Chocolate Oatmeal Skillet Cookie from Half Baked Harvest. It sounded so delicious I had to try it out. OMG was it delicious! It was like comfort food met fruit. It was (I keep saying was because it’s all gone and yes I made it yesterday lol) the perfect combo of sweetness and indulgence with the white chocolate. I’m not a huge white chocolate fan personally, but it was perfect with this recipe. It was really very easy to make and so good with vanilla ice cream on top too. In the recipe she mentions to scoop out some of the sauce that you make when you caramelize the peaches but that it’s not necessary….well it’s necessary! The sauce is sooo delicious….peach caramel…what is there not to like about this?! After I poured it over the ice cream, I licked the rest out of the cup 🙂 #YUMMM This recipe is a must try!
