Pizza…
Happy Monday! It’s a new week and I am ready to kick it into high gear. I had a super fun, last weekend (*sigh) of summer. I had the opportunity to do an Instagram Stories takeover for The Blog Bar on Saturday! This was my first time doing a takeover and I’ll be honest I was a little nervous. It turned out to be really fun and I’m so thankful to The Blog Bar for having me. A bunch of my friends also came over since I made a brunch recipe and cocktails for the takeover. They didn’t hesitate to taste test either lol. 😉
So this weekend when you are trying to figure out what to make look no further than this breakfast pizza. Yes, that’s right, I said breakfast PIZZA! There is never a wrong time for pizza am I right?? So this is a nice light pizza with eggs on it to make it perfect for brunch. It doesn’t have a red sauce so it’s not too heavy of a meal. I’m not going to lie, when I came up with this recipe I knew it would be good, but not this good. It’s sooo delicious you guys. My friends all had seconds, and some went in for thirds if that tells you anything. 🙂
Ingredients
- Pizza Dough (already prepared, you can find it at some specialty stores or Italian shops)
- 4 large eggs, let them sit out to get to room temperature
- Mini Heirloom Tomatoes (any variety of mini tomatoes works)
- 1/4 lb Prosciutto
- 1 large container of Arugula
- 2 tbsp Fresh Parsley, chopped
- 1/2 tsp Sea Salt & Pepper
- Freshly Grated Cheese (I like a variety like Gouda, Pyreness Agour, Parmesan, Monterey Jack, Mozzarella)
- Garlic (about 3 cloves, minced)
- 1/4 cup sliced sweet pepper (any kind works well)
- 1/2 tbsp olive oil
Directions
- Preheat your oven to 500F. Roll out your pizza on a floured surface and transfer it to a pizza stone or greased baking sheet.
- Using your hands create a “crust” around the outside edge of the dough.
- Brush the olive oil to coat all of the dough. Then spread the minced garlic evenly.
- Top with arugula, tomatoes, prosciutto, peppers, and cheese.
- Make 4 small wells in the center of the pizza for the eggs to go into. Make sure there is enough space in between so they don’t collide.
- Sprinkle with salt, pepper, and parsley.
- Put the pizza in the oven for about 8-10 minutes or until the crust is lightly golden and the yolks are set to your liking. I like the yolks running to dip the crust in.
- Let it sit for a couple minutes before cutting it. Serve it hot and enjoy!
