It’s Brunch Time…
Happy Saturday!! You guys the struggle is real with this routine thing. I feel like my brain is still on holiday mode. I’ve been getting organized but I’m still having a hard time getting my ass back into the hustle. Maybe this is a good thing to some point. I was a crazed lunatic before the holidays and now I feel like I can finally breathe and relax. OK, so now it’s January, and I have a ton of healthy recipes for you guys! I know we are all about getting back into a healthier lifestyle, including myself. Speaking of healthy, if you haven’t jumped on the matcha craze bandwagon yet, you really should. Matcha is a form of green tea but it’s grown and prepared differently which gives it all the health benefits.
Matcha Waffles…
Besides having an Instagram worthy latte, matcha is soooo good for you! It’s an antioxidant powerhouse. One cup of matcha tea is equal to 10 cups of regular green tea in the antioxidant race, plus it contains caffeine to give you that boost you get from your morning coffee. Also you can cook with it to get the same health beneifts without having to drink it if you aren’t a fan of the taste. I love adding it to breakfast foods, like waffles. So I have to tell you guys these matcha waffles turned out so freaking good. I knew the waffles would be good, but not this good. 🙂 Hubs devoured it and I followed in polishing off my own waffle. It’s super easy to make and it’s nice to make when you have guests over since it’s a little unexpected.

If you are looking for a good waffle maker check out this one!
- 1 cup whole wheat flour
- 1 tbsp honey
- 2 tsp matcha powder
- 1 tsp cinnamon
- 1 cup almond milk (you can use any kind of milk)
- 3 tbsp canola oil (you can also use coconut oil)
- 1/2 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp sea salt
- 1 egg
- Berries of your choice
- Pure maple syrup
- Powdered sugar (optional)
- Pre-heat your waffle maker and spray with a non-stick spray before using it.
- Mix all the dry ingredients together in one large bowl.
- Combine the wet ingredients in another bowl.
- Add the wet ingredients to the dry slowly. Do not over mix.
- Add a few spoonfuls to the center of your waffle maker.
- Follow the cooking time for your waffle maker as each one has different settings.
- Serve warm with berries and syrup. Enjoy!
- You can use a stand mixer, hand-held mixer, or a whisk for this recipe. Just make sure the speed is on low to not overmix.

YUM!I love love love matcha! When I lived in Asia I was able to get it for pennies and EVERYTHING was made with it! Matcha waffles, muffins whatever you could think of, there was matcha it! These look delicious!

OMG these look A-mazing!! I like to make matcha ice cream out of frozen bananas – just put in a food processor (not blender!) and add matcha powder. Now I can have matcha waffles with banana matcha ice cream!
