Pickles…
Ok so you guys all asked for my pickling recipe and here it is! I am a hugeeeeeee fan of pickles. Even as a kid they have been a favorite. I like to add them to burgers, sandwiches, and snack on them individually. After getting a batch of horseradish pickles from a local farmers market, I knew I had to create my own recipe to support the pickle habit and help my wallet out. Boris and I devoured the entire batch in a few days lol 🙂
After I did regular pickles I thought what else can be pickled? So I experimented with greens beans (a friend did these in the past) and asparagus. Holy moly you guys! They were so good! Crunchy with a little spicy kick. They are great for whenever you are craving something salty but not wanting to eat chips. It also dawned upon me that I should try to do the small tomatoes like the ones I buy at the Russian food stores. Pickled tomatoes are a tradition during the holidays in my family. You typically take a shot of vodka and chase it with a pickled tomato or a regular pickle. So I know it sounds weird but trust me it’s awesome! 🙂
These little pickled jars are also really nice for housewarming gifts. I gave a jar of asparagus to friends of mine and well it didn’t last long in their house. 🙂

*This recipe makes enough brine for 4 large 20oz jars or several small ones. Whatever brine you have leftover can be stored in the fridge for the next time.
- 4 cups of water
- 1/3 cup sugar
- 1/3 cup salt (I like to use sea salt)
- 1 cup apple cider vinegar
- 1 cup white vinegar
- *I like to use the small, thin cucumbers so more fit in a jar but any cucumber works
- 6 small cucumbers
- 10 sprigs of fresh dill
- 1 tbsp whole pepper corns
- 1/2 tsp red pepper flakes
- 2 tbsp chopped garlic
- 1 large handful of fresh green beans or whatever amount fits in your jar
- 8 sprigs of fresh dill
- 1 tbsp pepper corns
- 1/2-1 tsp red pepper flakes (These are very good spicy)
- 2 tbsp chopped garlic
- 1 bunch of uncooked asparagus
- 1 tsp fennel seeds
- 2 tbsp chopped garlic
- 1/2 tbsp pepper corns
- 10 thyme sprigs
- 1 package of campari tomatoes or ones that are similar in size
- 2 tbsp crushed garlic
- 10 sprigs of fresh dill
- 1 tbsp of pepper corns
- 1 tsp fennel seeds
- 1/2 tsp red pepper flakes
- In a medium sized pot bring the water to a boil
- Lower the temperature to a simmer and add in both vinegars
- Stir in the salt and sugar
- Remove from heat and let it cool
- *For each pickling recipe add the ingredients in the bottom of the jar first
- Add in the item you will be pickling (cucumber, green beans, asparagus, or tomatoes)
- Pour the cooled brine over the top. Do not fill all the way to the top
- Close the jar with a lid tightly and shake it around to get the ingredients mixed as evenly as possible.
- Place in the fridge for a minimum of 3 days
- For the tomatoes they will need 2 weeks in the fridge
- *All pickled items can stay in the fridge for up to 8-10 weeks. Just remember to close them tightly and give them a swirl every now and then so all the spices can distribute throughout the jar.
- *You can add as much or as little of the red pepper flakes. It's purely preference on your level of spice but 1/2 a tsp minimum for flavor
- *I use the chopped garlic from a jar because it is easier for pickling but you can use fresh garlic too

Lately I’ve been pickling my own jalapenos, and it is so much fun and much cheaper than buying them from the store. I’d love to try asparagus and tomatoes now too thanks to your article. 🙂
