New Month…
Happy April everyone. It’s so strange how this year has panned out so far. What started as an excitement for a new decade aka the “new roaring 20s” has quickly turned into a time of great sadness, economic loss instead of growth, a pandemic that has taken over our lives, and an incredible amount of uncertainty as we move forward. One thing that I think is a positive is the amount of time we all have to spend with our family and unplug for some time. I’m trying my hardest to find things to be grateful throughout the day. It’s not easy but honestly we are lucky to have all the things we need and our health. I hope you all find little joys throughout your day as well during this difficult time and hopefully some yummy recipes can help with that. 🙂
Raspberry Pistachio Skyr Cake…
I know most of us are trying to eat healthier but sometimes it’s really hard when you are craving something sweet. It’s also hard when you are staying home and want to snack constantly. So I made this raspberry pistachio cake with whole wheat flour and @icelandicprovisions skyr to keep it healthy. Problem solved! The loaf cake is more like a bread but because it’s so moist, I like to call it a cake. Also it’s loaded with raspberries and pistachios, which are both very good for you. It’s really delicious with coffee or tea anytime of the day too.
I like that it satisfies the sweet craving without feeling guilty. This loaf cake is very, very easy to put together and an easy treat to give someone in a care package as well. I’ve been baking a ton to stay busy and have been sharing some treats with my neighbors. What have you all been doing to stay busy? I’d love to hear from you. 🙂
Skyr Cake Recipe
- Stick and a half of butter (12 tbsp)
- 3/4 cup shelled pistachios, roughly chopped
- 3 eggs
- 2 tbsp vanilla extract
- 1 cup sugar (I used pure cane sugar)
- 4 tsp baking powder
- 2 cup flour (whole wheat)
- 1 container of Icelandic vanilla skyr (150g)
- 1 cup raspberries, halved
- Optional- 1/2 cup chocolate chips melted to drizzle on top
- Pre heat oven to 360°F
- Combine all dry ingredients in one bowl
- Melt butter and whisk it together with the sugar
- Add in the eggs and vanilla extract
- Stir in the vanilla skyr
- Add in the dry ingredients
- Fold in the raspberries and pistachios
- Lightly grease two loaf pans and fill 3/4 of the way up
- Bake 30-35mins until lightly golden brown on top and a toothpick comes out clean when inserted
- Let it cool and enjoy
