Happy Sunday everyone! Hope you are all loving the warmer weather we are having here in the northeast! It feels like spring is coming even though it’s only 50 but compared to below 20 degrees it’s a huge change! I’m hoping it sticks around! I can’t wait to eat brunch outside again and sip on rose…oh spring I am so ready for you! Speaking of brunch, I made this super easy, baked eggs dish for brunch at home, and oh man was it delicious! The eggs are perfectly cooked in the skillet combined with avocado, bacon, tomatoes, and some leeks. All you need to do is dip crusty bread into the mixture. I love when the yolks are runny and combined with the rest of the ingredients it’s like all the best parts of brunch on toast…yumm! Also did I mention how easy this was?? It bakes for 10 minutes and prep was 10 minutes , buttttt no one has to know you didn’t spend all morning in the kitchen prepping this amazing meal 😉
P.S. It also goes great with mimosas and you can use tons of other ingredients you may have hanging around in your fridge! Don’t be afraid to get creative 🙂
Ingredients
- Cast iron skillet (I used a 10in)
- 5 eggs, let them sit out for a few minutes to get to room temp so the yolks don’t get cooked too fast
- 1 ripe avocado, sliced lengthwise
- 1/2 of a leek, chopped
- 4 slices of turkey bacon cooked & crumbled (You can use regular bacon too)
- 1 cup chopped tomatoes
- 1 tbsp butter or olive oil
- Baguette or crispy toast
- Salt & Pepper to taste
Directions
- Pre-heat oven to 400 degrees
- In a oven- safe pan or skillet (cast iron skillets work best for this) cook the bacon and set aside.
- Melt the butter or add the oil and sauté the tomatoes and leeks for a few minutes until soft & fragrant
- Turn the heat off from the skillet and arrange the avocado slices in a pinwheel style
- Gently place an egg in between the slices, making sure the spacing is about even.
- Add salt and pepper
- Crumble the bacon over the top
- Place in the oven for 10 minutes or until eggs are done to your liking (if you don’t like your eggs very runny)
- Serve hot and with lots of bread
