Sunday Supper…
Some nights you just need comfort food am I right? Pasta is always my go-to choice for comfort food. There’s just something about a big bowl of pasta that is so comforting and not to mention a fairly easy dish to prepare. So pasta really doesn’t take that long to cook, which is great on a Sunday evening when you don’t want to spend what’s left of your weekend in the kitchen. Am I right?! #notreadtformonday
Baked Pasta…
I love using my cask iron skillet, like alllllll the time. It cooks food so well and is an easy one pan wonder. Baked pasta dishes are one of my favorite things to make in the cast iron. Everything can be made in the pan and then place it in the oven until it’s bubbly and cheesy. I mean who can resist that cheesy perfection? I certainly cannot and neither can the hubs. What makes this dish healthier is by using chicken sausage, adding in spinach, and whole grain pasta.
Homemade sauce is soooo good but I don’t always have the time to make homemade sauce, so that’s when I reach for a jar of Rao’s homemade sauce. I’m super picky with the ingredients in my sauce and have only found a few that taste good and are quality ingredients. Rao’s sauce hits the spot on flavor and great ingredients. There is a wonderful selection of flavors too but I typically go for the traditional marinara for pizzas and tomato basil for pasta dishes. Also if you get an opportunity to go to the Rao’s in the city, you really really should. It will be an ultimate food experience.

- 1/2 pound uncooked whole wheat rotini
- 2 tbsp olive oil
- 10 sausage links w/casing removed
- 1 large shallot chopped
- 3 garlic cloves, chopped
- 1/2 cup chopped yellow onion
- 1/2 cup red wine (I used cabernet)
- 1 16oz can diced tomatoes
- 1 8oz can tomato paste
- 2 tbsp chopped parsley
- 2 cups parmesan cheese
- 1-2 large handfuls of fresh spinach
- 1/4 cup light cream
- Preheat oven to 350F
- Cook pasta according to package directions
- Heat olive oil in a large oven proof skillet over medium heat
- Sauté garlic, shallot, and onions for about 2 mins
- Add sausage to skillet and stir until cooked
- Add red wine, tomatoes, and tomato paste. Stir well
- Turn heat down to low and simmer for 10 mins
- Add cooked pasta, 1 cup of cheese, 1 tbsp parsley, and cream. Stir well
- Use remainder of cheese to top the pasta and place in the oven for 10 mins
- Sprinkle 1 tbsp parsley and serve
- *I used to chicken sausage but you can use pork, beef, or turkey as long as its uncooked
- *Also I used sweet Italian and spicy sausage links but you can do either one
